My Family Sweet Potato Pie Recipe
OK, so I know when you bring up the words “family recipe” People get WEIRD. I mean really weird …and funny acting. I mean, they act like they are giving up their first-born child!!! I always find it so funny when I come across this scenario! My thinking is if you have this amazing recipe that brings your family such joy... why wouldn’t you want to share it so others can bring joy to their families as well! Well know this... on Mrs. All Pink Everything... there are NO SECRETS!!! If we know it... then you get to know it too!!!
So let me set the scene on how I came across this family recipe! It was a Sunday afternoon, and I was watching Jersey Shore Family Vacation with my neighbor when all of the sudden I get a text from my husband’s mother asking me if I want the recipe for Chauncey’s favorite Sweet Potato Pie. At this point we have been married for exactly 2 months to the date! Full disclosure… those first 2 months were a complete shit show. Funny, when you’re engaged and planning your wedding, EVERYONE seems to skate over the fact that once you walk down the aisle, it’s not necessarily sunshine and rainbows for the first couple of months, but more on that later!!
Anyway, she asks me if I want the recipe, and I immediately jump at the opportunity to do something super sweet and unexpected for my hubby! Side note, my husband travels a bit, and is used to coming home to me scrambling around trying “fluff up” the house real quick before he comes home so I look like I’ve been doing something all week, so I knew this would be a treat for him!
Ok, so here is what you really came here for…THE RECIPE!!
This is pretty simple, so I promise… even the most novice baker can make this!
Ingredients:
2 deep dish pie shells (I use Kroger brand)
3 plump Sweet Potatoes
1 Stick of Butter
11/2 Carnation milk - buy 2 cans
1/2 cup flour
2 cups sugar
1 tbsp Vanilla extract
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp Lemon extract
1/8 tsp salt
3 Eggs
Directions
Boil potatoes with skin until tender (this part may take a while, at least 30 – 40 minutes)
Peel skin off with 2 forks
Put potatoes in a mixing bowl, add milk, flour, butter, sugar, eggs (one at a time), lemon extract, vanilla extracts, nutmeg, and cinnamon.
Mix thoroughly
Pour into your pie shells.
Bake first 10 minutes at 375, then 350 for 50 minutes
